Being a personal trainer & GYROTONIC® instructor, I have a certain focus (movement, obviously). While I do cook and make some pretty tasty food that is really healthy, I have friends who are even better at it. Chefs for example.
After all, you talk about whatever your life’s work is all the time and who else wants to listen to that but people who understand and are equally fixated?

And those connections can help a business grow.

Which brings me to this recipe. It’s been a while since I posted a healthy recipe. Thankfully I have friends who’s profession is completely about cooking, like my friend Chef Ray Plosscowe. Five Spice Turkey Lettuce Cups from Chef Ray Plosscowe


12 ounces ground turkey

8 basil leaves, torn by hand

3 tablespoons cilantro leaves

1 tablespoon ginger (fresh chopped or powder)

1 heaping teaspoon Chinese Five Spice

1/8 teaspoon white pepper

1/2 red bell pepper, diced

3 garlic cloves, minced

3 scallions, chopped

1 tablespoon rice vinegar

1 tablespoon coconut sugar

1 teaspoon toasted sesame oil

2 teaspoons grapeseed oil

2 tablespoons shoyu or tamari

1 head red leaf lettuce, separated into leafs


  1. Preheat large pan on medium heat.
  2. Add grapeseed oil, saute red bell pepper and scallions for 1-minute.
  3. Add garlic and ginger, saute for 1-minute.
  4. Add remaining ingredients and saute until turkey is just brown -- about 5 minutes.
  5. Salt to taste.
  6. Transfer to serving bowl and spoon onto lettuce leafs.
